Just go in your Admin, Manage My products in the categories.
Here the list of categories appears with a blue number (a link) for each category.
You just click on the figure, a box appears with the name, you change and you find by clicking edit.

To rename a category:
My products manage categories
Then you have a figure in blue underlined click it opens the edit menu click on the figure to close.
